  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 cup grated carrots (about 2 medium carrots)
  • 1 medium onion, finely chopped
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup ketchup (plus extra for glazing)
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking dish by coating it with nonstick spray.
  2. In a large mixing bowl, combine ground turkey, grated zucchini, grated carrots, chopped onion, breadcrumbs, eggs, ketchup, Worcestershire sauce, salt, and pepper. Mix until just combined.
  3. Transfer the mixture to the prepared baking dish and shape it into a loaf.

  5. Bake for 60-70 minutes or until the internal temperature reaches 165°F (74°C).
