Instructions

  2. In the saucepan over medium heat, combine granulated sugar and corn syrup with 1/2 cup water until dissolved. Bring to a boil until it reaches 240°F (soft-ball stage).
  3. While the sugar mixture boils, whip egg whites in a mixing bowl until stiff peaks form.
  4. Carefully drizzle the hot sugar mixture into whipped egg whites while beating on high speed until thickened.
  5. Mix in vanilla extract and fold in chopped nuts.
  6. Drop spoonfuls onto wax paper or parchment paper and let cool for about one hour.
