Description

  • 3/4 cup whole milk (or dairy alternative)

Instructions

  2. In another bowl, mix together the milk, eggs, and olive oil until smooth.
  3. Pour the wet ingredients into the dry mixture and stir gently until just combined (lumps are okay).
  4. Heat a non-stick skillet over medium heat; drizzle with a little olive oil if desired.
  5. Pour about half a cup of batter for each pancake onto the skillet. Cook until bubbles form on top (about 2 minutes), then flip and cook until golden brown (another minute).
  6. Serve warm with maple syrup or fresh fruit.
