  • 1 lb lean ground beef or turkey
  • 1 medium yellow onion, chopped
  • 1 cup bell peppers, chopped (any color)
  • 2 tbsp taco seasoning
  • 14.5 oz can diced tomatoes, undrained
  • 2 cups low-sodium chicken broth
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot over medium heat, brown the ground meat for about 5-7 minutes, draining excess fat.
  2. Add chopped onion and bell peppers; sauté until softened, about 3-4 minutes.
  3. Stir in taco seasoning and cook for another minute.
