Description

  • 2 large eggs

  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour

  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper.
  2. In a mixing bowl, cream together the butter and sugar until smooth. Add eggs one at a time, mixing well after each addition, then stir in peppermint extract.
  3. In another bowl, whisk together cocoa powder and flour. Gradually fold this mixture into the wet ingredients until just combined.
  4. Gently fold in chocolate chips.
  5. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted comes out with moist crumbs attached.
