Instructions
- Prepare your tools: a saucepan, mixing bowl, whisk, and baking pan lined with parchment paper.
- In a small bowl, combine gelatin powder with 1/2 cup cold water; let it bloom for about 5 minutes.
- In a saucepan, mix granulated sugar, corn syrup, and 1/4 cup water. Heat over medium until dissolved and bring to a boil.
- Remove the sugar mixture from heat when it reaches 240°F (115°C). Pour into the mixing bowl with bloomed gelatin while whisking continuously until fluffy (approximately 10 minutes).
- Add peppermint extract and whisk until fully incorporated.
- Pour the mixture into the prepared pan, smooth the top with a spatula, dust with powdered sugar, cover lightly, and let set at room temperature for at least 4 hours or overnight before cutting into squares.
