Description

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup canned pumpkin puree
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. Combine graham cracker crumbs and melted butter in a bowl. Press the mixture into the bottom of the prepared dish.
  3. In another bowl, beat cream cheese until smooth. Gradually mix in sugar, then add pumpkin puree, eggs, vanilla, cinnamon, and nutmeg until well blended.
  4. Pour the filling over the crust and smooth it out. Bake for 30-35 minutes until edges are set but center is slightly jiggly.
  5. Allow cooling for about an hour at room temperature before refrigerating for at least two hours before slicing.
