  • ½ cup unsalted butter (melted)
  • 1 cup pumpkin puree
  • ¾ cup granulated sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

Instructions

  1. Preheat the oven to 350°F (175°C). Combine crushed gingersnap cookies and melted butter in a bowl, then press into a greased baking dish to form the crust.
  2. Whisk together pumpkin puree, sugar, cinnamon, and vanilla extract until smooth. Spread half over the crust.
