  • 12 oz ziti pasta
  • 15 oz canned pumpkin puree
  • 24 oz marinara sauce
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped (or dried)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook ziti pasta in salted boiling water for 8-10 minutes until al dente; drain.
  3. In a bowl, mix pumpkin puree, marinara sauce, ricotta, garlic powder, salt, pepper, and half the basil until well combined.
  4. Toss cooked ziti in the sauce mixture until evenly coated.
  5. In a greased baking dish, layer half of the pasta mixture, top with half of the mozzarella. Repeat layers.
  6. Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10-15 minutes until bubbly and golden brown.
  7. Let cool for 5 minutes before garnishing with remaining basil. Serve warm.
