- 2 cups dried red kidney beans
- 1 lb smoked sausage (preferably Andouille)
- 1 medium onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 tsp Cajun seasoning
- 2 bay leaves
- 2 tbsp olive oil
Instructions
- 1. Rinse and soak the dried kidney beans in plenty of water overnight.
- 2. In a large pot over medium heat, add olive oil and sauté the onions, bell peppers, and garlic until softened (about 5 minutes).
- 3. Add sliced smoked sausage to the pot and cook until browned on all sides (around 5 minutes).
- 4. Drain the soaked beans and add them to the pot along with chicken broth, Cajun seasoning, and bay leaves. Bring to a boil.
- 5. Reduce heat, cover, and let simmer for about 1 hour until beans are tender. Stir occasionally.
- 6. Remove bay leaves before serving hot over white rice or enjoy on its own.
