  • 2 cups dried red kidney beans
  • 1 lb smoked sausage (preferably Andouille)
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning
  • 2 bay leaves
  • 2 tbsp olive oil

Instructions

  1. 1. Rinse and soak the dried kidney beans in plenty of water overnight.
  2. 2. In a large pot over medium heat, add olive oil and sauté the onions, bell peppers, and garlic until softened (about 5 minutes).
  3. 3. Add sliced smoked sausage to the pot and cook until browned on all sides (around 5 minutes).
  4. 4. Drain the soaked beans and add them to the pot along with chicken broth, Cajun seasoning, and bay leaves. Bring to a boil.
  5. 5. Reduce heat, cover, and let simmer for about 1 hour until beans are tender. Stir occasionally.
  6. 6. Remove bay leaves before serving hot over white rice or enjoy on its own.
