  6. Roll out the dough to 1/8 inch thick on a floured surface. Use cookie cutters to cut shapes, ensuring half have cut-out windows.
  7. Place cookies on a baking sheet and bake for 12-15 minutes until lightly golden.
  8. Once cooled, spread raspberry jam on solid cookies and top with cut-out cookies.
