  • 8 oz spaghetti or fettuccine
  • 2 skinless salmon fillets (about 5 oz each)
  • 1 cup basil pesto (store-bought or homemade)
  • 1 cup cherry tomatoes, halved
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. In a large pot of salted boiling water, cook the spaghetti or fettuccine until al dente according to package directions. Reserve 1 cup of pasta water before draining.
  2. Season the salmon fillets with salt and pepper. Heat olive oil in a skillet over medium heat, then add the salmon skin-side down. Cook for about 4-5 minutes on each side until flaky and golden brown. Remove from heat and flake into pieces.
  3. In a large bowl, mix cooked pasta, flaked salmon, halved cherry tomatoes, and pesto sauce. Toss gently to coat evenly.
  4. If needed, add reserved pasta water gradually until desired sauciness is achieved.
  5. Plate the pasta mixture and sprinkle generously with grated Parmesan cheese and fresh basil leaves.
