  • 4 boneless, skinless chicken breasts
  • 1 cup fresh pineapple chunks
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp honey
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. Season chicken breasts with salt and pepper; place on one side of the prepared sheet pan.
  3. In a bowl, toss chopped bell peppers, sliced onion, and garlic in olive oil; season with salt and pepper before adding to the other side of the pan.
  4. In another bowl, whisk soy sauce, brown sugar, honey, and lime juice until combined. Toss pineapple chunks in the sauce.
  5. Pour the sauce over chicken and veggies on the sheet pan.
  6. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C). Serve hot.
