- 2 lbs beef bones (marrow bones or oxtails)
- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 1 large onion, quartered
- 2 tbsp apple cider vinegar
- 10 cups filtered water
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Roast the beef bones for 30 minutes until browned.
- While the bones are roasting, chop the vegetables into rough chunks.
- In a slow cooker, add the roasted bones and chopped vegetables. Pour in the apple cider vinegar.
- Cover with filtered water, leaving some space at the top. Season with salt and pepper.
- Set the slow cooker on low for at least 12 hours or high for about 8 hours.
- Once done, strain the broth through a fine mesh sieve into a large bowl; discard solids. Allow to cool before storing.
