Ingredients

  • 2 lbs beef bones (marrow bones or oxtails)
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 large onion, quartered
  • 2 tbsp apple cider vinegar
  • 10 cups filtered water
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Roast the beef bones for 30 minutes until browned.
  2. While the bones are roasting, chop the vegetables into rough chunks.
  3. In a slow cooker, add the roasted bones and chopped vegetables. Pour in the apple cider vinegar.
  4. Cover with filtered water, leaving some space at the top. Season with salt and pepper.
  5. Set the slow cooker on low for at least 12 hours or high for about 8 hours.
  6. Once done, strain the broth through a fine mesh sieve into a large bowl; discard solids. Allow to cool before storing.
