  • 2 lbs beef chuck roast
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 (14.5 oz) cans crushed tomatoes
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the beef with salt and pepper, then sear until browned on all sides.
  2. Sauté onions and garlic in the same skillet for about three minutes until soft.
  3. Place the seared beef in a slow cooker, top with sautéed onions and garlic, add crushed tomatoes and oregano. Stir gently to combine.
  4. Cover and cook on low for 8 hours or high for 4 hours until the beef is tender enough to shred.
  5. Shred the beef with two forks, mix it back into the sauce, then serve over pasta or polenta.
