  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup green or brown lentils
  • 2 medium carrots, diced
  • 2 celery stalks, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium vegetable or chicken broth
  • 1 can (14.5 oz) diced tomatoes (no salt added)
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, garlic, carrots, and celery; sauté until tender (about 5 minutes).
  2. Add chicken breasts with salt and pepper; cook until browned on all sides (5-7 minutes).
  3. Stir in cumin, paprika, and thyme; cook for an additional 2 minutes.
  4. Pour in broth and diced tomatoes; add rinsed lentils. Bring to a boil, then reduce heat to low and simmer for 25 minutes.
  5. Remove cooked chicken from the pot and shred it before returning to the soup.
  6. Ladle into bowls and garnish with fresh herbs if desired.
