- 6 cups low-sodium vegetable or chicken broth
- 1 can (14.5 oz) diced tomatoes (no salt added)
- 2 tsp cumin
- 1 tsp paprika
- 1 tsp dried thyme
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onions, garlic, carrots, and celery; sauté until tender (about 5 minutes).
- Add chicken breasts with salt and pepper; cook until browned on all sides (5-7 minutes).
- Stir in cumin, paprika, and thyme; cook for an additional 2 minutes.
- Pour in broth and diced tomatoes; add rinsed lentils. Bring to a boil, then reduce heat to low and simmer for 25 minutes.
- Remove cooked chicken from the pot and shred it before returning to the soup.
