  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 1/4 cups all-purpose flour
  • 1/4 cup cornstarch
  • 6 oz dark chocolate (at least 70% cocoa)
  • 1/2 cup miso paste (white or yellow)
  • 1/2 cup coconut cream (chilled)
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
  2. In a mixing bowl, beat together softened butter and granulated sugar until light and fluffy (about 4 minutes).
  3. Gradually mix in all-purpose flour and cornstarch until just combined.
  4. Press the dough firmly into the prepared pan, then bake for 20-25 minutes or until lightly golden. Allow to cool completely.
  5. In a saucepan over medium heat, combine coconut cream, miso paste, brown sugar, and vanilla extract. Stir until smooth and thickened (about 10 minutes).
  6. Pour the miso caramel over the cooled shortbread base and chill in the fridge for about 30 minutes.
  7. Melt dark chocolate using a double boiler or microwave until smooth, then pour over the set caramel layer. If desired, sprinkle chopped pecans on top before chilling again for another 30 minutes.
