  • 1 cup mashed sweet potatoes (about 2 medium)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup whole milk (or almond milk)
  • 1/4 cup melted butter
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it.
  2. Roast the sweet potatoes until soft, about 30-40 minutes. Let cool slightly and then mash until smooth.
  3. In a bowl, mix the mashed sweet potatoes with brown sugar, eggs, milk, and melted butter until well combined.
  4. In another bowl, whisk together flour, baking powder, cinnamon, and salt. Gradually fold the dry ingredients into the wet mixture.
  5. If using nuts, fold them into the batter.
  6. Fill each muffin cup three-quarters full and bake for 20-25 minutes until golden brown and a toothpick comes out clean.
