  • 1 cup fresh pomegranate seeds (approximately 200g)
  • 4 cups baby spinach or kale (about 120g)
  • ½ cup crumbled feta cheese (approximately 75g)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar

Instructions

  1. Preheat your oven to 400°F (200°C). Toss cubed sweet potatoes in olive oil, salt, and pepper; spread them on a baking sheet.
  2. Roast for 25-30 minutes until golden brown and tender, flipping halfway through.
  3. While the potatoes roast, rinse and dry the greens.
  4. In a large bowl, combine roasted sweet potatoes with greens, pomegranate seeds, and feta cheese.
  5. Whisk together olive oil and balsamic vinegar; drizzle over the salad before tossing gently to combine.
