  • 4 bone-in chicken thighs
  • 2 tbsp fresh ginger, minced
  • 1 cup full-fat coconut milk
  • 2 tbsp freshly squeezed lime juice
  • 3 tbsp low-sodium soy sauce
  • 1 tsp fish sauce

Instructions

  1. In a medium bowl, whisk together soy sauce, fish sauce, ginger, lime juice, and coconut milk until smooth.
  2. Place chicken thighs in a large zip-top bag and pour marinade over them; seal tightly and massage to coat evenly. Marinate in the fridge for at least 1 hour or overnight.
  3. Preheat oven to 400°F (200°C) and let marinated chicken sit at room temperature for about 15 minutes.
  4. Arrange chicken skin-side up on a parchment-lined baking sheet and bake for 35-40 minutes or until internal temperature reaches 165°F (75°C).
  5. While baking, boil leftover marinade in a saucepan until thickened (about 5 minutes).
  6. Serve the chicken with thickened sauce poured over top, alongside jasmine rice or stir-fried vegetables.
