- 1 cup full-fat coconut milk
- 2 tbsp freshly squeezed lime juice
- 3 tbsp low-sodium soy sauce
- 1 tsp fish sauce

- In a medium bowl, whisk together soy sauce, fish sauce, ginger, lime juice, and coconut milk until smooth.
- Place chicken thighs in a large zip-top bag and pour marinade over them; seal tightly and massage to coat evenly. Marinate in the fridge for at least 1 hour or overnight.
- Preheat oven to 400°F (200°C) and let marinated chicken sit at room temperature for about 15 minutes.
- Arrange chicken skin-side up on a parchment-lined baking sheet and bake for 35-40 minutes or until internal temperature reaches 165°F (75°C).
