  • 2 medium fresh lemons (juiced)
  • 1 tsp turmeric powder
  • 2 medium carrots (diced)
  • 1 medium onion (chopped)
  • 3 garlic cloves (minced)
  • 4 cups vegetable broth
  • 1 cup coconut milk (optional)

Instructions

  1. Chop the onion, garlic, carrots, and rinse red lentils under cold water until clear.
  2. In a large pot, heat olive oil over medium heat. Add onions; sauté until translucent (about 5 minutes).
  3. Stir in minced garlic and diced carrots; cook for an additional 3-4 minutes.
  4. Incorporate rinsed lentils and turmeric; toast for about one minute.
  5. Add vegetable broth and lemon juice. Bring to a boil; reduce heat and simmer for 20-25 minutes until lentils are tender.
  6. If using, stir in coconut milk during the last 5 minutes of cooking.
