  • 1 cup green or brown lentils, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 cup bell peppers, diced
  • 1 cup corn (frozen or canned)
  • 1 cup tortilla chips, crushed
  • Juice of 1 lime
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until fragrant (3-5 minutes).
  2. Add diced bell peppers and corn; sprinkle in chili powder, cumin, and smoked paprika. Stir until the colors brighten.
  3. Pour in lentils, diced tomatoes, and vegetable broth. Bring to a gentle boil while stirring occasionally.
  4. Reduce heat and simmer covered for about 30 minutes or until lentils are tender but firm.
  5. Remove from heat and mix in fresh lime juice. Serve hot topped with crushed tortilla chips for added crunch.
