  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 8 oz high-quality white chocolate, chopped
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 1 cup fresh cranberries (or dried)
  • 3 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C). Combine graham cracker crumbs and melted butter; press into the bottom of a springform pan. Bake for 10 minutes until golden.
  2. Melt white chocolate in the microwave or double boiler until smooth.
  3. In a bowl, beat cream cheese until fluffy. Add sour cream and sugar; mix well. Incorporate eggs one at a time, ensuring no lumps remain.
  4. Gently fold in melted white chocolate and cranberries.
  5. Pour filling into the cooled crust; bake for 50-60 minutes until set but slightly jiggly. Turn off the oven and crack the door to cool slowly.
