- 1 cup Worcestershire sauce
- 4 tbsp unsalted butter (divided)
- 4 medium carrots (chopped)
- 2 large onions (chopped)
- 4 cloves garlic (minced)
- Salt and pepper to taste
Instructions
- Preheat oven to 300°F (150°C).
- In a large Dutch oven, melt 2 tbsp butter over medium-high heat. Season the chuck roast with salt and pepper, then sear on all sides until browned (about 4-5 minutes per side). Remove roast from the pot.
- Add remaining butter to the pot, then sauté the chopped onions and carrots for about 5 minutes. Stir in minced garlic and cook for another minute.
- Pour in Worcestershire sauce, scraping up browned bits from the bottom of the pot. Return the roast to the pot.
- Cover tightly and bake for 3 hours or until fork-tender.
- Let rest for 10 minutes before slicing and serve drizzled with sauce.
