  • 3 lb chuck roast
  • 1 cup Worcestershire sauce
  • 4 tbsp unsalted butter (divided)
  • 4 medium carrots (chopped)
  • 2 large onions (chopped)
  • 4 cloves garlic (minced)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a large Dutch oven, melt 2 tbsp butter over medium-high heat. Season the chuck roast with salt and pepper, then sear on all sides until browned (about 4-5 minutes per side). Remove roast from the pot.
  3. Add remaining butter to the pot, then sauté the chopped onions and carrots for about 5 minutes. Stir in minced garlic and cook for another minute.
  4. Pour in Worcestershire sauce, scraping up browned bits from the bottom of the pot. Return the roast to the pot.
  5. Cover tightly and bake for 3 hours or until fork-tender.
  6. Let rest for 10 minutes before slicing and serve drizzled with sauce.
