Ingredients
  

For the Beef Mixture
  • 1 lb ground beef use lean beef for less grease
  • 1 cup onion finely chopped
  • 2 cloves garlic minced
  • 1 can cream of mushroom soup 10.5 oz can
  • 1 cup beef broth low sodium recommended
  • 1 cup frozen mixed vegetables peas and carrots work well
  • 1 teaspoon Worcestershire sauce adds depth of flavor
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
For the Cheese Sauce
  • 1 cup cheddar cheese shredded
  • 1 cup milk whole milk preferred
  • 2 tablespoons butter unsalted
  • 2 tablespoons all-purpose flour for thickening
  • 1/2 teaspoon garlic powder optional
For the Topping
  • 1 bag frozen tater tots 32 oz bag
  • 1 cup cheddar cheese shredded, for topping

Method
 

Prepare the Beef Mixture
  1. In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
  2. Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the cream of mushroom soup, beef broth, frozen mixed vegetables, Worcestershire sauce, salt, and pepper. Mix well and let simmer for 5 minutes.
Make the Cheese Sauce
  1. In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux, cooking for about 1-2 minutes.
  2. Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring constantly, until the mixture thickens, about 3-5 minutes.
  3. Remove from heat and stir in the shredded cheddar cheese until melted and smooth. If using, add garlic powder for extra flavor.
Assemble the Casserole
  1. Preheat your oven to 375°F (190°C).
  2. In a 9x13 inch baking dish, spread the beef mixture evenly across the bottom.
  3. Pour the cheese sauce over the beef mixture, spreading it evenly.
  4. Top with frozen tater tots in a single layer.
  5. Sprinkle additional shredded cheddar cheese over the tater tots.
Bake the Casserole
  1. Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the tater tots are golden brown and crispy.
  2. Remove from the oven and let it cool for 5 minutes before serving.
