Brie and Apple Grilled Cheese

Ingredients
  

For the Sandwich
  • 8 slices sourdough bread or your favorite bread
  • 8 oz brie cheese rind removed and sliced
  • 1 medium apple thinly sliced (preferably Granny Smith or Honeycrisp)
  • 4 tbsp unsalted butter softened for easy spreading
  • 1 tbsp honey optional, for drizzling
  • 1 tbsp fresh thyme optional, for added flavor

Method
 

Prepare the Ingredients
  1. Remove the rind from the brie cheese and slice it into thin pieces. This will help it melt evenly when grilled.
  2. Wash the apple, core it, and slice it thinly. Aim for about 1/8-inch thickness to ensure they soften slightly while grilling.
  3. Soften the butter if it’s not already at room temperature, making it easier to spread on the bread.
Assemble the Sandwich
  1. Take 4 slices of sourdough bread and spread a generous layer of softened butter on one side of each slice. This will create a golden, crispy exterior.
  2. On the unbuttered side of 4 slices, layer the brie cheese evenly, followed by the apple slices. If using, drizzle a little honey and sprinkle fresh thyme on top of the apples for added flavor.
  3. Top with the remaining slices of bread, buttered side facing out.
Grill the Sandwiches
  1. Heat a skillet over medium heat. Once hot, carefully place the assembled sandwiches in the skillet.
  2. Cook for about 3-4 minutes on one side, or until golden brown. Press down gently with a spatula to ensure even cooking.
  3. Flip the sandwiches carefully and cook for another 3-4 minutes on the other side, until the bread is golden and the brie has melted.
Serve
  1. Once cooked, remove the sandwiches from the skillet and let them rest for a minute. This allows the cheese to set slightly.
  2. Cut each sandwich in half and serve warm, optionally drizzled with more honey.

Notes

For a variation, try adding a handful of arugula or spinach for a peppery contrast. You can also experiment with different types of cheese, such as gouda or cheddar.
