Prepare the Ingredients
- Remove the rind from the brie cheese and slice it into thin pieces. This will help it melt evenly when grilled.
- Wash the apple, core it, and slice it thinly. Aim for about 1/8-inch thickness to ensure they soften slightly while grilling.
- Soften the butter if it’s not already at room temperature, making it easier to spread on the bread.
Assemble the Sandwich
- Take 4 slices of sourdough bread and spread a generous layer of softened butter on one side of each slice. This will create a golden, crispy exterior.
- On the unbuttered side of 4 slices, layer the brie cheese evenly, followed by the apple slices. If using, drizzle a little honey and sprinkle fresh thyme on top of the apples for added flavor.
- Top with the remaining slices of bread, buttered side facing out.
Grill the Sandwiches
- Heat a skillet over medium heat. Once hot, carefully place the assembled sandwiches in the skillet.
- Cook for about 3-4 minutes on one side, or until golden brown. Press down gently with a spatula to ensure even cooking.
- Flip the sandwiches carefully and cook for another 3-4 minutes on the other side, until the bread is golden and the brie has melted.
Serve
- Once cooked, remove the sandwiches from the skillet and let them rest for a minute. This allows the cheese to set slightly.
- Cut each sandwich in half and serve warm, optionally drizzled with more honey.
