Ingredients
  

For the Salad
  • 2 cups sweet corn fresh, frozen, or canned (drained)
  • 1 cup red bell pepper diced
  • 1 cup green onions sliced
  • 1 cup cherry tomatoes halved
  • 1 cup Fritos corn chips crushed slightly
For the Dressing
  • 1 cup sour cream preferably full-fat for creaminess
  • 1/2 cup mayonnaise for added richness
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder for a hint of spice
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Prepare the Salad Ingredients
  1. In a large mixing bowl, combine the sweet corn, diced red bell pepper, sliced green onions, and halved cherry tomatoes. Use a spoon to gently mix the ingredients together, ensuring even distribution.
  2. If using frozen corn, make sure it is thawed and drained. If using canned corn, drain it well to avoid excess moisture.
Make the Dressing
  1. In a separate bowl, whisk together the sour cream, mayonnaise, lime juice, chili powder, salt, and black pepper until smooth. This dressing will add creaminess and flavor to the salad.
  2. Taste the dressing and adjust the seasoning if necessary, adding more salt or lime juice according to your preference.
Combine and Serve
  1. Pour the dressing over the salad mixture in the large bowl. Gently fold the dressing into the salad using a spatula, ensuring that all ingredients are coated evenly.
  2. Just before serving, add the crushed Fritos corn chips to the salad and mix gently. This will keep them crispy and provide a delightful crunch.
  3. Serve immediately for the best texture, or refrigerate for up to 1 hour before serving if you prefer a chilled salad.

Notes

This salad is best served fresh, but can be made a few hours in advance. Just add the Fritos right before serving to maintain their crunch.
