Ingredients
  

For the Chicken
  • 2 pieces boneless, skinless chicken breasts pounded to even thickness for uniform cooking
  • 2 tablespoons olive oil extra virgin for best flavor
  • 1 teaspoon dried oregano for authentic Greek flavor
  • 1 teaspoon garlic powder adds depth to the chicken
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
For the Tzatziki Dressing
  • 1 cup Greek yogurt preferably full-fat for creaminess
  • 1 small cucumber grated and excess moisture squeezed out
  • 2 cloves garlic minced for strong flavor
  • 1 tablespoon fresh dill chopped, can substitute with dried if necessary
  • 1 tablespoon lemon juice freshly squeezed for brightness
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
For the Salad
  • 4 cups mixed salad greens such as arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cup red onion thinly sliced
  • 1 cup feta cheese crumbled
  • 1/2 cup kalamata olives pitted and halved

Method
 

Prepare the Chicken
  1. Preheat a grill pan over medium-high heat. This ensures that the chicken gets a nice sear.
  2. In a bowl, combine olive oil, oregano, garlic powder, salt, and black pepper. Mix well.
  3. Coat the chicken breasts with the marinade, ensuring they are evenly covered. Let them marinate for at least 10 minutes to absorb flavors.
  4. Place the chicken on the grill pan and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). This ensures the chicken is cooked through and safe to eat.
  5. Once cooked, remove the chicken from the pan and let it rest for 5 minutes before slicing. This helps retain the juices.
Make the Tzatziki Dressing
  1. In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and black pepper.
  2. Whisk the ingredients together until smooth and well combined. This dressing will add creaminess and a refreshing flavor to the salad.
Assemble the Salad
  1. In a large serving bowl or platter, layer the mixed greens, cherry tomatoes, red onion, feta cheese, and kalamata olives.
  2. Slice the rested chicken breasts and arrange them on top of the salad.
  3. Drizzle the tzatziki dressing over the salad just before serving, or serve it on the side for guests to add as desired.

Notes

This salad is best served fresh. You can prepare the tzatziki dressing a few hours in advance and store it in the refrigerator. The flavors will meld beautifully.
