Ingredients
  

For the Rice
  • 1 cup Jasmine rice Rinsed under cold water until water runs clear
  • 2 cups Water
  • 1 pinch Salt To taste
For the Turkey
  • 1 lb Ground turkey Lean variety preferred
  • 2 tablespoons Soy sauce Low sodium recommended
  • 1 tablespoon Sesame oil For flavor
  • 2 cloves Garlic Minced
  • 1 inch Ginger Freshly grated
  • 1 teaspoon Ground black pepper To taste
  • 1 cup Bell pepper Diced
  • 1 cup Carrot Julienned or shredded
  • 1 cup Green onions Chopped, for garnish
For the Sauce
  • 2 tablespoons Soy sauce Low sodium recommended
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Honey Or maple syrup for a vegan option
  • 1 teaspoon Sriracha Adjust to taste for spice
  • 1 teaspoon Cornstarch To thicken the sauce
  • 2 tablespoons Water To mix with cornstarch

Method
 

Prepare the Rice
  1. In a medium pot, combine the rinsed jasmine rice, water, and a pinch of salt. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed.
  3. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
Cook the Turkey
  1. In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  2. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes until browned and cooked through.
  3. Stir in the soy sauce, ground black pepper, diced bell pepper, and shredded carrot. Cook for an additional 3-5 minutes until the vegetables are tender.
Make the Sauce
  1. In a small bowl, whisk together soy sauce, rice vinegar, honey, Sriracha, and cornstarch mixed with water until smooth.
  2. Pour the sauce over the cooked turkey and vegetables in the skillet. Stir well to coat and cook for another 2-3 minutes until the sauce thickens slightly.
Assemble the Bowls
  1. Divide the cooked rice among four bowls.
  2. Top each bowl with the ground turkey mixture, and garnish with chopped green onions.
  3. Serve immediately and enjoy your delicious and healthy ground turkey rice bowls!

Notes

Feel free to customize the vegetables based on your preference. Broccoli, snap peas, or zucchini would also work well in this dish.
