Ingredients
  

For the Sandwich
  • 8 slices Italian bread Use ciabatta or focaccia for best results.
  • 4 oz salami Thinly sliced.
  • 4 oz capicola Thinly sliced.
  • 4 oz provolone cheese Thinly sliced.
  • 1 cup romaine lettuce Chopped.
  • 1 medium tomato Diced.
  • 1/2 cup pepperoncini Sliced.
For the Dressing
  • 1/4 cup olive oil Extra virgin for best flavor.
  • 2 tbsp red wine vinegar Adds acidity.
  • 1 tsp dijon mustard For tanginess.
  • 1 clove garlic Minced.
  • 1/2 tsp salt Adjust to taste.
  • 1/4 tsp black pepper Freshly ground.

Method
 

Prepare the Dressing
  1. In a mixing bowl, combine the olive oil, red wine vinegar, dijon mustard, minced garlic, salt, and black pepper.
  2. Whisk the ingredients together until well combined and emulsified. This will create a flavorful dressing that will enhance the sandwich.
Assemble the Sandwich
  1. Lay out the slices of Italian bread on a clean cutting board.
  2. Spread a generous amount of the dressing on each slice of bread. This adds flavor and moisture to the sandwich.
  3. On half of the bread slices, layer the salami, capicola, provolone cheese, chopped romaine lettuce, diced tomato, and sliced pepperoncini.
  4. Top with the remaining slices of bread, dressing side down, to create sandwiches.
Optional Grilling
  1. If desired, heat a sandwich press or grill over medium heat.
  2. Place the assembled sandwiches on the grill and press down gently. Grill for about 3-4 minutes on each side, or until the bread is golden and the cheese is melted.
Serve
  1. Remove the sandwiches from the grill and let them cool for a minute.
  2. Cut each sandwich in half and serve immediately with extra dressing on the side if desired.
