  • 1 pound boneless sirloin steak chilled for 20 minutes if needed and very thinly sliced against the grain
  • 1 teaspoon kosher salt divided
  • 1/2 teaspoon freshly ground black pepper divided
  • 1 tablespoon avocado oil or other neutral high-heat oil divided
  • 1 medium green bell pepper about 5 ounces (140 g), seeded and thinly sliced
  • 1/2 medium yellow onion about 3 ounces (85 g), thinly sliced
  • 4 ounces cremini mushrooms thinly sliced, optional
  • 2 cloves garlic about 6 g, finely minced
  • 1 teaspoon Worcestershire sauce
  • For the Cheese Roll Ups
  • 8 slices provolone cheese about 8 ounces (225 g) total
  • Optional Garnish
  • 1 tablespoon chopped fresh parsley optional, for serving

  1. Heat the oven to 400°F (205°C). Line 2 large rimmed baking sheets with parchment paper or silicone baking mats.
  2. Pat the thinly sliced steak dry: Season it with 3/4 teaspoon of the kosher salt and 1/4 teaspoon of the black pepper. Separate any slices that are sticking together so they sear evenly.
  3. Heat 1/2 tablespoon (7.5 ml) avocado oil in a 12-inch (30 cm) skillet over medium-high heat. Add the bell pepper, onion, optional mushrooms, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon black pepper. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables are tender and most of their released moisture has evaporated.
  4. Stir the garlic into the vegetables and cook for about 30 seconds, just until fragrant. Transfer the vegetable mixture to a plate.
  5. Return the skillet to medium-high heat and add the remaining 1/2 tablespoon (7.5 ml) avocado oil. Add the steak in a single layer, working in two batches if necessary. Cook for about 1 to 2 minutes per side, just until browned and cooked through to your preferred doneness. For food safety, whole-muscle beef should reach at least 145°F (63°C) followed by a 3-minute rest.
  6. Return the vegetables to the skillet with the steak and add the Worcestershire sauce. Toss over medium heat for about 1 minute. The filling should be moist but not watery. If liquid collects in the bottom of the pan, continue cooking briefly until it evaporates. Remove from the heat.
  7. Arrange 4 provolone slices on each prepared baking sheet, leaving at least 2 inches (5 cm) between them. Bake at 400°F (205°C) for 5 to 7 minutes, until the cheese is fully melted, bubbling, and lightly golden around the edges.
  8. Remove the pans from the oven and let the cheese cool for about 3 to 5 minutes. The rounds should be flexible enough to lift with a spatula without flowing or tearing. If they feel completely crisp, they have cooled too long; roll them while still warm.
  9. Divide the steak and vegetable mixture evenly among the 8 cheese rounds, placing the filling slightly off-center. Avoid overfilling, which can make the wrappers difficult to close.
  10. Use a thin spatula to loosen each cheese round. Fold one edge over the filling, then continue rolling gently into a compact cylinder. Place seam-side down for a minute or two so the warm cheese holds its shape.
  11. Transfer the Keto Philly Cheesesteak Roll Ups to a serving plate. Sprinkle with the optional parsley and serve warm.
