Prepare the Meat Mixture
- In a large skillet over medium heat, add the ground beef and diced onion. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Stir occasionally to break up the meat.
- Drain any excess grease from the skillet. Add the taco seasoning, black beans, and diced tomatoes to the skillet. Stir well to combine and let simmer for about 5 minutes to allow the flavors to meld.
Assemble the Casserole
- Preheat your oven to 350°F (175°C). In a 9x13 inch baking dish, spread half of the crushed tortilla chips evenly across the bottom.
- Layer half of the meat mixture over the tortilla chips, followed by half of the sour cream, and then half of the shredded cheese.
- Repeat the layers with the remaining tortilla chips, meat mixture, sour cream, and cheese.
- Top the casserole with the corn, spreading it evenly over the top layer of cheese.
Bake the Casserole
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. This helps to heat through without burning the top.
- After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it cool for about 5 minutes before serving.
Garnish and Serve
- Sprinkle chopped green onions over the top of the casserole before serving for added flavor and color.

Notes
This casserole can be made ahead of time and stored in the refrigerator before baking. Just add an extra 10-15 minutes to the baking time if baking straight from the fridge.
