Ingredients
  

For the Pasta
  • 12 ounces fettuccine or your favorite pasta
For the Sauce
  • 2 tablespoons olive oil extra virgin for best flavor
  • 2 cloves garlic minced
  • 1 cup heavy cream room temperature
  • 1/2 cup Parmesan cheese freshly grated
  • 1 tablespoon truffle oil adjust to taste
  • 2 tablespoons truffle shavings for garnish

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. This helps to flavor the pasta as it cooks.
  2. Add the fettuccine and cook according to package instructions until al dente, usually about 8-10 minutes.
  3. Once cooked, reserve 1 cup of pasta water and then drain the pasta in a colander.
Prepare the Sauce
  1. In a large skillet, heat the olive oil over medium heat. This will infuse the oil with flavor.
  2. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Pour in the heavy cream and bring to a gentle simmer. Stir frequently to prevent sticking.
  4. Once the cream is simmering, add the grated Parmesan cheese and stir until melted and smooth.
  5. Add the truffle oil and mix well. Taste the sauce and season with salt and freshly cracked black pepper.
Combine Pasta and Sauce
  1. Add the drained fettuccine to the skillet with the sauce. Toss gently to coat the pasta evenly.
  2. If the sauce is too thick, gradually add reserved pasta water until the desired consistency is reached.
Serve
  1. Plate the truffle pasta onto serving plates.
  2. Garnish with truffle shavings and chopped parsley for a fresh touch.
  3. Serve immediately and enjoy your luxurious truffle pasta!
