  • 1 cup ripe tomatoes, chopped Roma or vine-ripened tomatoes work well.
  • 1 small cucumber, peeled and diced Remove seeds if desired for a smoother texture.
  • 1/4 cup red onion, finely chopped Soak in cold water for 10 minutes to reduce sharpness.
  • 1 clove garlic, minced Adjust amount based on preference.
  • 2 tablespoons fresh lime juice Freshly squeezed for best flavor.
  • 1/4 cup fresh basil leaves Torn or chopped, for garnish.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Freshly ground for best flavor.
  • 1 tablespoon extra virgin olive oil For drizzling before serving.

Method
 

Prepare the Ingredients
  1. Cube the watermelon and chop the tomatoes, cucumber, and red onion. Mince the garlic. This ensures all ingredients are ready for blending.
  2. If desired, soak the chopped red onion in cold water for 10 minutes to mellow its flavor before adding to the soup.
Blend the Gazpacho
  1. In a blender, combine the cubed watermelon, chopped tomatoes, diced cucumber, soaked red onion, minced garlic, lime juice, salt, and black pepper. Blend until smooth, about 30-60 seconds. This step creates a uniform texture and allows the flavors to meld.
Chill and Serve
  1. Transfer the gazpacho to a mixing bowl and refrigerate for at least 30 minutes to chill. This enhances the flavors and ensures a refreshing experience.
  2. Before serving, taste and adjust seasoning if necessary. Serve in chilled bowls, garnished with fresh basil leaves and a drizzle of olive oil.
