Description

Zucchini Noodle Stir Fry is a vibrant, healthy dish that combines colorful veggies and zesty flavors for a quick meal. This delightful stir fry features tender zucchini noodles tossed with bell peppers, carrots, and a savory sauce enriched with garlic and ginger. Perfect for busy weeknights or weekend gatherings, this dish is not only visually appealing but also packed with nutrients, making it a guilt-free indulgence for the whole family.

Ingredients

Scale
  • 4 medium zucchinis (spiralized into zoodles)
  • 1 cup bell peppers (sliced; mix of red, yellow, green)
  • 1 cup carrots (shredded or julienned)
  • 3 tbsp coconut aminos or low-sodium soy sauce
  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 1 tbsp sesame oil
  • 2 scallions (sliced)
  • 1 cup protein (e.g., chicken, shrimp, or tofu) – optional

Instructions

  1. Prepare the Zoodles: Spiralize zucchinis to create about 4 cups of zoodles. Set aside on paper towels to absorb excess moisture.
  2. Sauté the Aromatics: Heat sesame oil in a large skillet over medium heat. Add minced garlic and grated ginger; sauté until fragrant (about 30 seconds).
  3. Add Your Vegetables: Toss in bell peppers and carrots; stir-fry for about 5 minutes until they soften but remain crunchy.
  4. Combine Zoodles & Sauce: Gently fold in zucchini noodles along with coconut aminos or soy sauce. Cook for an additional 3-4 minutes until warm but still al dente.
  5. Finish & Serve: Remove from heat and stir in sliced scallions before serving hot.
