  • 3 boneless, skinless chicken breasts (1.5 lbs), diced
  • 2 cups broccoli florets (fresh or frozen)
  • 8 oz pasta (penne or fettuccine)
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and chopping the broccoli and mincing the garlic.
  2. Cook pasta in salted boiling water until al dente according to package instructions. Drain and set aside.
  3. In a large skillet over medium heat, heat olive oil and sauté diced chicken until golden brown (about 5-7 minutes). Season with salt and pepper.
  4. Add garlic and broccoli to the skillet; sauté for another few minutes until broccoli is bright green but still crisp.
  5. Lower heat and stir in heavy cream and soy sauce; let simmer until combined. Gradually add Parmesan cheese until melted.
  6. Toss cooked pasta into the skillet, mixing thoroughly to coat with sauce. Serve warm.
