Ingredients

  • 2 lbs beef chuck roast, cut into cubes
  • 4 medium carrots, sliced
  • 4 medium Yukon gold potatoes, cubed
  • 2 large sweet onions, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup red wine (preferably dry)
  • 2 tsp fresh thyme (or 1 tsp dried)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot or Dutch oven over medium-high heat, heat olive oil and sear the beef cubes until browned on all sides.
  2. Remove the beef and sauté onions and garlic in the same pot until translucent.
  3. Add carrots and potatoes; stir to coat in flavors.
  4. Return beef to the pot; pour in broth and red wine. Bring to a simmer.
  5. Stir in thyme and season with salt and pepper. Cover and let simmer on low for about 2 hours until the beef is fork-tender.
  6. Serve hot with crusty bread or mashed potatoes.
