  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1 large egg
  • 1/2 cup buttermilk
  • 2 cups icing sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together oats, flour, brown sugar, ginger, cinnamon, and baking soda.
  3. In another bowl, beat the egg and mix in the buttermilk until combined.
  4. Combine the wet mixture into the dry ingredients and stir until just blended—do not overmix.
  5. Drop tablespoon-sized portions of dough onto prepared sheets, spacing them two inches apart.
  6. Bake for 10-12 minutes until edges are golden. Allow cookies to cool.
  7. For the icing, mix icing sugar with water until smooth and drizzle over cooled cookies.
