  • 4 cups fresh clams, cleaned
  • 4 slices bacon, chopped
  • 1 medium sweet onion, diced
  • 2 stalks celery, diced
  • 2 large russet potatoes, peeled and diced (about 2 cups)
  • 1 cup heavy cream
  • 2 cups clam juice or water
  • 2 tsp fresh thyme, chopped
  • Freshly cracked black pepper to taste

Instructions

  1. Rinse clams under cold water; soak in cornmeal for an hour if desired.
  2. In a large pot over medium heat, cook bacon until crispy; remove and drain on paper towels, leaving some fat in the pot.
  3. Sauté onions and celery in the bacon fat until softened (about 5 minutes).
  4. Add potatoes and clam juice/water; bring to a simmer until potatoes are tender (15 minutes).
  5. Stir in clams, cream, and thyme; cover to steam clams open (5 minutes).
  6. Season with black pepper and stir in bacon bits before serving hot with crusty bread.
