  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • 2 tbsp finely ground coffee (or instant espresso)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.
  3. In a large mixing bowl, cream the softened butter with granulated and brown sugars until fluffy.
  4. Beat in the egg, vanilla extract, and peppermint extract until well combined.
  5. Gradually incorporate dry ingredients into the wet mixture; fold in coffee grounds and chocolate chips.
  6. Scoop tablespoon-sized balls of dough onto prepared baking sheets, spacing them two inches apart.
  7. Bake for about 10 minutes or until edges are set and centers remain soft. Cool on wire racks before serving.
