Ingredients

  • 2 cups short-grain rice
  • 2.5 cups water
  • 1 tsp salt
  • 1 cup chopped vegetables (carrots, peas, or bell peppers)
  • 4 sheets nori (seaweed)
  • Soy sauce for dipping

Instructions

  1. Rinse the short-grain rice under cold water until the water runs clear. Combine the rinsed rice and water in a medium pot.
  2. Bring to a boil over high heat, then reduce to low heat and cover. Cook for about 20 minutes until the rice is tender.
  3. Remove from heat and let sit covered for 10 minutes. Fluff the rice gently with a fork and add salt while warm.
  4. Mix in the chopped vegetables until evenly distributed.
  5. Wet your hands slightly to prevent sticking, scoop about 2 tablespoons of rice into your palm, and mold it into a ball.
  6. Optionally wrap each rice ball with strips of nori before serving with soy sauce on the side.
