  • 1 lb fresh salmon fillets
  • 2 cups sushi rice
  • 4 nori sheets
  • 8 oz cream cheese, softened
  • 3 tbsp low-sodium soy sauce
  • 4 green onions, chopped
  • Sriracha or spicy mayo (optional)
  • 1/2 cup mayonnaise

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Rinse sushi rice under cold water until clear, then cook according to package instructions.
  3. Season salmon fillets with salt and pepper.
  4. In a bowl, blend cream cheese with soy sauce until smooth.
  5. Spread cooked rice evenly in a greased baking dish. Layer seasoned salmon on top and slather with the cream cheese mixture.
  6. Bake for 20-25 minutes until bubbly and golden. Drizzle with sriracha or spicy mayo, garnish with green onions, and serve.
