  • 6 medium Fresh Hatch Chiles
  • 8 oz Cream Cheese, softened
  • 1 cup Shredded Cheese Blend (Monterey Jack and Cheddar)
  • 1 lb Ground Sausage or Ground Beef
  • 4 Garlic Cloves, minced
  • ½ cup Sour Cream
  • ¼ cup Chopped Cilantro

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with parchment paper.
  2. Roast the Hatch chiles on a baking sheet for about 20 minutes until blistered. Let them steam in a covered bowl.
  3. Cook the ground sausage or beef in a skillet over medium heat until browned. Add minced garlic during the last minute.
  4. In a mixing bowl, combine cooked meat with cream cheese and shredded cheese blend; season with salt and pepper.
  5. Peel the cooled chiles, make a slit along one side, and stuff them with the filling mixture.
  6. Arrange stuffed chiles in the prepared baking dish and bake for 15-20 minutes until bubbly and golden brown.
  7. Serve with sour cream and garnish with chopped cilantro.
