  • 2 slices sourdough bread
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons tomato pesto (store-bought or homemade)
  • 1 tablespoon butter
  • Fresh basil leaves for garnish

Instructions

  1. Gather all ingredients; slice the bread and cheese.
  2. Spread butter generously on one side of each slice of bread.
  3. On the unbuttered side of one slice, layer mozzarella cheese, tomato pesto, basil leaves, and cheddar cheese. Top with another slice of bread (buttered side out).
  4. Heat a nonstick skillet over medium heat and grill the sandwich for about 3-4 minutes until golden brown.
  5. Carefully flip the sandwich using a spatula and grill the other side for another 3-4 minutes until crispy and gooey inside.
  6. Remove from the skillet, cut in half, and serve immediately with extra tomato pesto for dipping.
