  • 2 lbs turkey necks
  • 1 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 2 bay leaves
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey necks and cook until golden brown, about 5-7 minutes.
  2. Stir in chopped onions and minced garlic; sauté until fragrant, around 5 minutes.
  3. Pour in chicken broth and add bay leaves and thyme. Bring to a boil, then reduce heat and simmer for one hour.
  4. Remove turkey necks from the pot. In a bowl, whisk flour with cold water until smooth, then stir it back into the broth until thickened.
  5. Season gravy with salt and pepper to taste. Return turkey necks to the pot and serve hot over mashed potatoes or biscuits.
