  • 1 lb lean ground turkey
  • 1 packet taco seasoning (about 1 oz)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen corn
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, chopped green onions

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a 9×13 inch baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground turkey for about 5-7 minutes until no longer pink. Drain excess fat.
  3. Stir in taco seasoning, black beans, and corn. Simmer for 5 minutes to blend flavors.
  4. Pour the turkey mixture into the prepared baking dish and top with shredded cheddar cheese.
  5. Bake for 20-25 minutes until cheese is bubbly and golden brown.
  6. Allow to cool slightly before serving. Top with sour cream and chopped green onions.
