Ingredients
  

For the Sauce
  • 2 tablespoons olive oil extra virgin for best flavor
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 can crushed tomatoes 28 oz can, preferably San Marzano
  • 2 tablespoons tomato paste for depth of flavor
  • 1 teaspoon sugar to balance acidity
  • 1 teaspoon dried oregano or 1 tablespoon fresh, chopped
  • 1 teaspoon dried basil or 1 tablespoon fresh, chopped
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground
  • 1/4 cup fresh parsley chopped, for garnish

Method
 

Prepare the Base
  1. In a large saucepan, heat the olive oil over medium heat. This will help to sauté the onion and garlic, releasing their flavors into the oil.
  2. Add the finely chopped onion to the saucepan and sauté for about 5 minutes, or until translucent. Stir occasionally to prevent burning.
  3. Add the minced garlic and sauté for an additional 1-2 minutes, until fragrant. Be careful not to let the garlic brown, as it can become bitter.
Build the Sauce
  1. Stir in the crushed tomatoes and tomato paste. The crushed tomatoes provide the base of the sauce, while the paste adds richness.
  2. Add the sugar, dried oregano, dried basil, salt, and black pepper. The sugar helps to balance the acidity of the tomatoes.
  3. Bring the mixture to a gentle simmer. Reduce the heat to low and let it cook uncovered for about 30 minutes, stirring occasionally. This allows the flavors to meld and the sauce to thicken.
Finish and Serve
  1. Taste the sauce and adjust the seasoning if necessary. You may want to add more salt, pepper, or herbs according to your preference.
  2. Once the sauce has thickened to your liking, remove it from the heat. Serve over cooked spaghetti or your favorite pasta.
  3. Garnish with chopped fresh parsley before serving for a pop of color and freshness.

Notes

For a heartier sauce, consider adding ground meat (beef, turkey, or sausage) when sautéing the onions. Cook until browned before adding the tomatoes.
