Ingredients
  

For the Pancake Batter
  • 1 cup mashed sweet potatoes Cooked and cooled
  • 1 cup all-purpose flour Sifted
  • 2 tablespoons brown sugar Packed
  • 1 teaspoon baking powder For leavening
  • 1/2 teaspoon baking soda For leavening
  • 1/2 teaspoon salt To enhance flavor
  • 1 cup milk Use whole or plant-based milk
  • 1 large egg Room temperature
  • 1 teaspoon vanilla extract For flavor
  • 1 teaspoon cinnamon Optional, for extra flavor
For Serving
  • 1/4 cup maple syrup For drizzling
  • 1/4 cup butter Melted, for serving
  • 1/4 cup chopped nuts Optional, for topping
  • 1/4 cup sliced bananas Optional, for topping

Method
 

Prepare the Sweet Potatoes
  1. Peel and chop 1 medium sweet potato into chunks. Boil in water for about 15-20 minutes until tender. Drain and mash until smooth. Allow to cool.
Make the Pancake Batter
  1. In a large mixing bowl, combine the mashed sweet potatoes, milk, egg, vanilla extract, and brown sugar. Whisk until well combined.
  2. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.
Cook the Pancakes
  1. Heat a griddle or frying pan over medium heat and lightly grease with butter or oil.
  2. Pour about 1/4 cup of batter onto the griddle for each pancake. Cook for 3-4 minutes until bubbles form on the surface.
  3. Flip the pancakes and cook for an additional 2-3 minutes until golden brown and cooked through.
Serve
  1. Serve warm with maple syrup, melted butter, and your choice of toppings such as chopped nuts or sliced bananas.

Notes

For best results, ensure that the sweet potatoes are well mashed and cooled before adding to the batter. You can also add chocolate chips or blueberries to the batter for added flavor.
