Prepare the Sweet Potatoes
- Peel and chop 1 medium sweet potato into chunks. Boil in water for about 15-20 minutes until tender. Drain and mash until smooth. Allow to cool.

- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.
Cook the Pancakes
- Heat a griddle or frying pan over medium heat and lightly grease with butter or oil.
- Pour about 1/4 cup of batter onto the griddle for each pancake. Cook for 3-4 minutes until bubbles form on the surface.
- Flip the pancakes and cook for an additional 2-3 minutes until golden brown and cooked through.

- Serve warm with maple syrup, melted butter, and your choice of toppings such as chopped nuts or sliced bananas.
