Description

  • 1 cup quinoa
  • 2 cups water
  • 2 cups ripe strawberries, chopped
  • 1 medium cucumber, diced
  • 1/2 small red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine rinsed quinoa and water; bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until water is absorbed. Fluff with a fork and let cool.
  2. While quinoa cools, chop strawberries, cucumber, and red onion into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  4. In a large bowl, combine cooled quinoa with strawberries, cucumber, red onion slices, and feta cheese. Drizzle the dressing over the mixture.
  5. Toss gently to combine without crushing the strawberries.
  6. Chill in the fridge for at least 30 minutes before serving.
